Most incense sold today is not made of what you think it is. The common method is simple and cheap: a bamboo stick is dipped in charcoal paste, dried, then soaked in a synthetic fragrance oil. What burns is largely charcoal. What you smell is largely aroma chemical.

What changes when the material is real

Pure botanicals behave differently in fire. Resins soften and release slowly. Woods hold their note as they burn rather than flaring and vanishing. The fragrance arrives in layers because the material itself is layered — there is no single synthetic molecule doing all the work.

The difference is most obvious in the room afterwards. Synthetic incense tends to leave a flat, insistent residue that sits in fabric for days. Botanical incense fades. It shares the space with you and then it lets go.

The headache question

People who say incense gives them headaches are usually reacting to concentration, not to incense. A heavily perfumed stick delivers a large dose of a small number of aroma chemicals into an enclosed room. Pure botanical material is more complex and less concentrated, and most people find it markedly easier to be around.

This is not a claim that natural means harmless. Any combustion produces smoke, and any room where something is burning should be ventilated. But there is a real difference between breathing plant matter and breathing perfume fixative.

Why we make it the harder way

Hand-rolling with resins, woods and essential oils is slower and more expensive than dipping. The sticks are less uniform. The scent varies a little between batches, because botanicals vary between harvests.
